Ginger gives classic Thanksgiving staple a modern edge. Make it ahead at home and quickly pop it in in the microwave or toaster oven as you help set the table.
Chef Lee’s Slow Cooked Sweet & Sour Butternut Squash with Cranberry and Ginger
- 2 tbsp honey
- 8 pieces of sliced butternut squash with skin removed
- 1.5 cups of water
- 4 tablespoons dry cranberries
- 1 tablespoon of butter
- 1 cinnamon stick
- Pinch of salt
- ½ a lemon
- 2 small slices of ginger
INSTRUCTIONS
- Slice squash and remove the skin, add to pan
- Add honey, cranberries, and ginger
- Add enough water to cover the squash
- Add lemon juice, salt, butter, and cinnamon stick
- Bring to a boil
- Lower to a simmer for 15 minutes and then flip and squash for another 15 minutes
- Poke with a fork, and when soft they’re done
- Plate squash
- Add reduced sauce over top of squash to finish
