Unleavened Fresh Kitchen

Unleavened Fresh Kitchen was born from a friendship and desire to bring wholesome food to the Dallas community at a price point many could afford. Owners and long-time friends, Tom Dynan and Scott Piland, started their journey by looking into other markets for emerging trends in the restaurant industry and what was missing in Dallas. The result is Unleavened Fresh Kitchen, an approachable fast casual restaurant serving up fresh takes on classic favorites.

We caught up with Tom and Scott to learn more about their favorite bites and work in the Dallas community.

What makes your menu unique?

Scott: “The Unleavened menu is a mix of food favorites made into fast casual items that are easy to understand. No matter your dietary restriction, we’ve built a menu that can work for everyone. Whether you’re a vegetarian, gluten free or just can’t get enough fried chicken, there’s something for everyone. Almost every menu item was designed to be accessible to all, with just slight modifications.”

Tom: “We keep things fresh with what we call the “House Guest,” a rotating monthly favorite like the Commodore, a Nashville inspired hot chicken wrap, or the Spring Breaker green, a play on a salad you might find in the Florida Keys, made with blackened shrimp.”

What’s your favorite dish on the menu?

Tom: “Split Grapefruit Brulee – half a Texas grapefruit, segmented, bruléed with sugar, served with fresh blackberries. A breakfast item sure to start your day off right.”

Scott:  “The West Coast wrap – corn starch fried shrimp, mâche, iceberg, green onion, cilantro, shaved carrot, spicy avocado, and sweet Thai chili aioli. This dish has a lot of exciting flavors that blend seamlessly together to create a memorable meal.

Tell us about Unleavened’s “Here For U” program.

Tom:  “Our “Here For U” program has really evolved out of a desire to give back to our community in multiple ways. We wanted a way to harness our brand energy and provide an outlet to the community to assist in fundraising efforts at a local level. Current ways we do that are through “Here For U” dining events, monetary and in-kind donations, as well as partnering with Dallas ISD and Medical City Children’s Hospital to help kids develop smart and nutritionally sound recipes to promote more balanced eating habits.

Scott: “Also, through our “Here For U” program, we have partnered with The Rosedale Group, a Dallas-based non-profit supporting Veterans in our community, by providing financial and volunteered time support.

Where do you spend time when you’re not working?

Both: “Probably at the Dallas Arboretum with family, a Mavs game, or enjoying a cold one at the Rustic.”

What’s next for Unleavened Fresh Kitchen?

Scott “We’ve always wanted a delivery component to our business model. UberEATS gives us that, and has allowed us to bring our food to new parts of town.”

Tom:  “Further growing the Unleavened brand through developing new ways to touch  additional markets, foster meaningful relationships with our current customers and associates, and positively impact our community.
